the “chapon”: another barbaric indulgence from the french terroir

The Chapon is a castrated chicken, fattened for 6 months (around 4,5 kgs) – the good ones are fed with pure grain – and ususally ready for the holiday season. For xmas dinner, almost every year i promise myself i will fix something else this time..but i always get back to it.. So good, so tasty and refined..

Take a look at this video, it is french but has a very “terroir” feel to it and it might make you hungry quickly.
